FELIZ Cinco de Mayo!
Once the boys went to school, I spent the morning decorating our dining room and prepping food.
On our Mexican dinner menu:
baked chicken taquitos
beans 'n rice
salsa 'n guacamole
cheesecake sopapilla
It was DELICIOUS! And we have plenty of leftovers to munch on for the rest of the week!
